About Porter Abbot
Porter Abbot Mill & Hearth is a small local mill and bakery serving Atlanta, Georgia. We’re devoted to freshly milled whole grains, thoughtfully selected ingredients, and traditional foods made in small batches.
Our work brings together baking, grain milling, honey, and seasonal orchard products.
Our guiding idea is simple: good food begins with good ingredients and careful preparation.
We mill whole wheat berries shortly before baking rather than using flour that has been milled and stored for an extended period. Fresh milling preserves the bran, germ, natural oils, flavor, and character of the whole grain.
Our breads are made to be nourishing, flavorful, and substantial. Because the full bran is present in our flour, you may occasionally experience a “crunch” when eating our baked goods. That happens because a fragment of the bran has become crispy during the baking process and is quite normal. Think of it as proof that we’re using all of the wheat berry in our flour.
Most of our breads and muffins are made entirely with freshly milled whole grains. Some recipes may include added vital wheat gluten or other specialty ingredients to improve structure, texture, or performance.
Each product description identifies the principal grains and ingredients used.
We use a changing selection of organic, regeneratively grown, and carefully sourced wheat varieties. These may include heritage and specialty grains such as Rouge de Bordeaux, Butler’s Gold, Sonora, Red Fife, Spelt, Pima Club, Sky Dance, Stardust, and other varieties selected for flavor, nutrition, and baking performance.
Because grain availability changes from season to season, individual blends may occasionally change.
While we appreciate the rich tradition and distinctive flavor of sourdough bread, we have chosen a different approach for our whole grain breads. We use a carefully measured amount of yeast to achieve the consistency, texture, and flavor we want in every loaf.
Our priority is to showcase the natural goodness of freshly milled organic whole grains. By milling our flour just before mixing the dough, we preserve the full complement of bran, germ, and naturally occurring nutrients that make whole grains so valuable. Using yeast allows us to focus on bringing out the wonderful flavor of these grains while producing a reliably delicious loaf with a tender crumb and satisfying texture.
Sourdough is a wonderful tradition, but we believe exceptional whole grain bread can be made without it.
Ordering and Availability
We bake on selected days and in limited quantities. The current menu, ordering deadline, and scheduled pickup or delivery dates are listed on the This Week’s Bake page.
Because we are a small-batch bakery, some products may sell out before the ordering deadline.
Advance ordering is strongly recommended. Most products are baked according to confirmed orders so that customers receive them as fresh as possible and unnecessary food waste is minimized.
A small number of additional items may occasionally be available, but they should not be assumed.
Orders are available at the designated pickup location and time shown during checkout or in your order confirmation. Customer pickup is not available at our home kitchen.
Please arrive during the stated pickup window or contact us as soon as possible if you anticipate a problem.
When you know that you will miss your pickup, please contact us before the pickup window closes at:
Email: welcome@porterabbot.com
Telephone: 678-990-1212
We will make a reasonable effort to arrange an alternative pickup, but another time or location cannot be guaranteed. Unless another arrangement is confirmed, a missed order may be held for up to 24 hours after the scheduled pickup window.
Limited local delivery may be available within our service area on designated days. Available delivery options and any applicable charge will appear during checkout after you enter your address.
Delivery availability may depend on location, order size, and the week’s baking schedule.
At this time, our baked goods are intended for local pickup or delivery rather than shipping. Certain shelf-stable products may become available for shipping in the future.
Recurring orders and subscriptions may be offered for frequently purchased products such as sandwich bread, muffins, flour, or grain. When available, subscription information will be listed in the store.
A recurring order helps us plan production and helps ensure that your preferred products are reserved.
Freshly Milled Flour and Grain
Yes, when listed as available. Flour is milled in small batches and is generally scheduled for same-day pickup or delivery so that customers receive it as fresh as reasonably possible.
Available grains, grind options, package sizes, and ordering deadlines will be shown on the product page.
Selected whole grains may be offered in smaller quantities for customers who mill or cook grain at home. Availability will depend on our current inventory and supplier requirements.
For short-term use, keep the flour tightly sealed in a cool, dry place. For longer storage, refrigeration or freezing is recommended because whole-grain flour contains the grain’s natural oils.
Allow refrigerated or frozen flour to return to room temperature while still sealed before opening the container. This helps prevent condensation from forming in the flour.
Ingredients and Dietary Questions
We use organic and/or regeneratively farmed ingredients whenever practical and identify them accurately in our product descriptions. Many of our grains are certified organic, but not every ingredient in every product will necessarily be organic.
We do not describe a product as fully organic unless it meets the applicable requirements for that claim.
Depending on the recipe, our products may contain honey, fruit, or another sweetener. Many of our breads use extra-virgin olive oil rather than highly processed vegetable fats. We never use shortening.
Please review the individual product description for the ingredients used in a specific item.
Many Porter Abbot products contain wheat and may also contain eggs, honey, tree nuts, peanuts, dairy, soy, or other allergens, depending on the recipe.
Products are prepared in a kitchen where multiple ingredients are handled. We cannot guarantee that any product is completely free from cross-contact with a particular allergen.
Customers with serious food allergies should contact us before ordering.
Not at this time. Our kitchen regularly handles wheat, spelt, rye, and other gluten-containing grains, so we cannot represent our products as safe for people with celiac disease or serious gluten sensitivity.
Some products may be made without dairy, but many recipes contain honey or eggs. Vegan products will be identified specifically when offered.
We may be able to make limited adjustments to certain recipes, but we cannot guarantee that every substitution will produce the same quality or that cross-contact can be prevented.
Please contact us before placing the order. A special request is not confirmed until you receive a response from Porter Abbot.
Product Care
Because our bread is made without preservatives, it is best enjoyed fresh.
Keep the bread tightly wrapped or in a well-sealed container at room temperature for short-term use. For longer storage, slice the loaf and freeze it. Individual slices can then be thawed or toasted as needed.
Refrigeration may extend shelf life but can also cause bread to become firm or stale more quickly.
Yes. For best results, wrap the loaf or individual slices securely before freezing. Removing only the slices you need makes it easier to enjoy the bread over time without repeatedly thawing the entire loaf.
Storage recommendations vary by product. Most muffins should be kept tightly covered and enjoyed within the period stated on the label or product page. Freezing is usually the best option when they will not be eaten promptly.
Changes, Cancellations, and Problems
Please contact us as soon as possible. Changes or cancellations made before the ordering deadline can usually be accommodated.
Once ingredients have been prepared or baking has begun, we may be unable to cancel the order or provide a full refund.
Contact us as soon as possible. Because baked goods are perishable and pickup locations may be available only during specific hours, we cannot guarantee that an order can be held or redelivered.
Please contact us promptly and include your name, order number, and a description of the problem. A photograph may also be helpful when the concern involves the condition of a product.
We want customers to be pleased with their orders and will make a reasonable effort to address legitimate quality or fulfillment problems.
Honey and Orchard Products
Raw, unfiltered local honey may be offered when inventory is available. Because honey production varies with weather, nectar flow, and the health of the bees, quantities may be limited.
Children under one year of age should not be given honey.
Seasonal apples, apple products, or other orchard-related items may be offered as our trees and partnerships allow. Availability will vary by harvest, crop quality, and applicable food-production requirements.
Follow the current store listings for seasonal offerings.
